راز سبوس و سلامت

چکیده

نان و برنج از غلات پرمصرف هستند. ارزش آنها به خاطر نشاسته (منبع تولید انرژی) و سبوس است. سبوس معدن فیبر، مواد معدنی و انواع ویتامین‌های ضروری است که برای تبدیل نشاسته به انرژی در سلول‌ها ضروری است. در ایران سبوس از غلات خارج می‌شود که این موضوع سبب انواع بیماری‌ها می‌شود. حذف سبوس به معنی عدم تولید انرژی و پیامد آن تبدیل گلوکز به چربی و قند خون است که منشأ بیماری‌های سندروم متابولیک و قلبی و عروقی می‌باشد. از طرفی حذف سبوس به معنی فقر فیبر در غذای مردم و نتیجه آن کاهش ایمنی بدن و بروز انواع بیماری‌ها است. البته خوردن سبوس جدای از دانه مشکل‌ساز است. از جمله باعث کاهش جذب املاح دو ظرفیتی شده و یا موجب التهاب کولون می‌شود تا جایی که به انسداد روده می‌انجامد. لذا راز سلامت، خوردن نان سبوس‌دار کامل و برنج قهوه‌ای است. امروزه خوردن غلات سبوس‌دار یک فرهنگ در کشورهای با شاخص سلامت و طول عمر بالا تبدیل شده است. در آلمان که مهد نان است بیش از 80% انواع نان‌ها سبوس‌دار هستند. مصرف رایج برنج قهوه‌ای در چین و ژاپن از عوامل مهم جلوگیری از پیری زودرس است. اما علت حذف سبوس در کشور کم آگاهی مسئولان و مردم، مزه پسندی مشتریان و مشکلات پخت نان سبوس کامل است. در این گفتار ضمن بیان مخاطرات حذف سبوس، به راه‌حل‌های عملی در رفع این موانع اشاره شده است.

Bran mysterious and health

Rice and bread are two frequently used foods which are full of starch and bran. Bran is a great source for fiber, minerals and several kinds of useful vitamins that are essential for transforming starch to energy in cells. In Iran bran is earned from cereals and this cause many kinds of diseases. If we eliminate bran from our foods, glucose transfers to fat which may cause metabolic syndrome, cordial diseases and several kinds of digestive cancer. On the other hand, if we eat bran separately, it causes such problems as: material absorption reduction or blocking the gut. So, eating bran breads and brown rice is the best way for our health. Today, eating seeds with bran has been transferred to a healthy life style in developed countries. Germany produces about 80 percent of bran breads in this country. Consumption of brown rice in China and Japan has prevented oldness. The education of bakery authorities is most important for public usage of bran from food. In this paper, the practical solutions for these problems are presented.
